Celebrating Fat Tuesday #ShroveTuesday with these soft, light and airy savoury pancakes is definitely a treat before the Lent season begins. These are so fluffy and flavourful they’ll make your heart happy.
I think these pancakes are perfect for brunch but will work well as ‘breakfast for dinner’… Each bite is so delectable and appetising and filled with chorizo, what else could you ask for? I think however, this could also be made with some crispy bacon bits to substitute the chorizo.
The best part about making pancakes is they are quick and easy to make. You can always fancify pancakes however you want and it’s always a huge success. They are just the right amount of melt-in-your-mouth delicious.
I was inspired to make pancakes today only because my favourite cousin-in-law Nadia Azavedo urged me to do so…She is a must try home baker based in Porvorim, Goa and her cakes are to die for… She said I should blog about it as it’s International Pancake Day.. I’m glad I listened to her and did..
So, first I thought I’ll go for some sweet pancakes maybe with some oats and bananas cos that’s what I have available at the moment in my pantry but I wasn’t feeling the sweetness today and also it was almost lunch time… Then, I remembered about this chorizo a friend got for us from Prague… So, did my little experiment. And WOW! I couldn’t ask for anything better…
This recipe was enough for 2 servings with 4 fluffy pancakes..but one can change the recipe as per ones preference.
INGREDIENTS~
- 5 large heaped tbsp of self raising flour
- 1 sprig green onion, finely chopped
- 2 inch piece chorizo, finely diced
- 2 tbsp Kraft Cheddar Cheese Spread
- 2 eggs
- Buttermilk (1 tbsp of low fat natural yoghurt + 3tbsp water)
- Freshly crushed pepper, lots of it
- Salt to taste
