Festive Eggnog

Eggnog is a very quick and easy to make drink which can be had either spiked or without alcohol. A perfect drink for the holidays.

  • 4 nos Eggs Medium sized
  • 1/4 cup Sugar
  • 2 cups Milk warm
  • 1 tsp Spice mix extra for sprinkling on top
  • 1/4 cup Pasteis de Nata liqueur or more


  • Heat the milk and set aside until slightly lukewarm and not boiling.
  • Start by separating the egg whites and egg yolks.
  • Whisk the egg yolks with sugar until light and fluffy.
  • Add the alcohol and spice mixture to the egg yolks and sugar mixture and whisk until you achieve a ribbon like consistency.
  • Finally add in the warm milk slowly, tempering the eggs.
  • Whisk the egg whites until stiff peaks and then fold this into the eggnog mixture.
  • Serve warm or chilled.


  • You can add the zest of any citrusy fruit like lemons, oranges, limes to flavour this eggnog. 
  • Substitute with any alcohol of your choice or omit it altogether.
  • You can add thick double cream to this about 1/4 cup to make it more rich and creamy.
  • If you don't want raw eggs in your eggnog then cook the eggnog on a low flame until a custard like texture.
  • For the homemade spice mix I added 2 tbsp ground ginger, 1tbsp ground nutmeg, 1/2 tbsp ground cloves, 2 tbsp ground cinnamon, 4 tbsp mixed spice, 1/2 tbsp ground cardamom. 
  • Add more or less sugar according to your taste preference.
